Cookies and Cream Red Velvet Cupcakes

INGREDIENTS
Cupcakes
 
1 Box Duncan Hines Red Velvet Cake Mix
Ingredients Listed on Cake Mix Box
 
Frosting/Filling
 
10 Oreos, crushed
1/2 Cup Butter, softened
8 oz. Cream Cheese
2 tsp. Vanilla Extract
3-4 Cup Powdered Sugar
 
DIRECTIONS
1. Follow instructions on cake mix box to prepare cupcakes.
2. Mix butter and cream cheese together. Add vanilla extract.
3. Slowly add powdered sugar until you reach your desired consistency.
4. Add crushed Oreos.
5. Pipe onto/into cooled cupcakes. Top with mini Oreos, if desired.

NOTES
If you love cookies and cream AND red velvet, this is the perfect treat for you! I’d recommend easing up on the frosting if you decide to add filling, otherwise it’ll be too overwhelming. The filling is a wonderful surprise, while the frosting primarily serves to make the cupcakes look nice. Be sure to thoroughly crush the Oreos because any cookie chunks will surely clog your piping bag!
I made a second batch of cream cheese (with a little bit of Oreos) frosting because the cookies and cream frosting wasn’t enough. If you’re making these for a party (I made these for a Christmas party, hence the choice of a red recipe was intentional!), sprinkles are always a great option for decoration on the cream cheese frosting. They don’t look as appealing on the cookies and cream frosting because there’s not much color contrast.

I also made a few ginormous cupcakes to act as centerpieces. I had extra batter remaining and thought, “Why not?!” 🙂
